It's hard for chef-owner Tim Ma to take a step back from Maple Ave Restaurant, which he calls his "baby." But, effective February 15, that's what he did, a move necessary to free up some time as he plans to launch three new concepts over the next two years.
First things first: Ma is crossing the river. He confirmed to The Post that he will be opening a D.C. restaurant, though he wasn't able to provide any other details.
"D.C. scares me, I'm not going to lie,"he said. "I've spent most of my life in Virginia, I'm comfortable in Virginia." He anticipates the new restaurant will open in 2016.
In the meantime, he has his hands full with a supper club and catering business he plans to launch next month, and his forthcoming sandwich shop, Chase the Submarine, which will open in early fall in Vienna, if construction stays on track.
The supper club, called Gather +Feast, will give fans of Maple Ave and Water & Wall a chance to have the chef cook in their own homes. Ma says he'll test dishes that may end up on future menus.

The catering service, which will be sold through a Kickstarter,seems like a pretty great deal, too: For $100 per person (with a minimum of eight people and a max of 12), Ma will come to your house and cook one of several pre-selected but customizable menus. He'll also include a server, all of the cookware and dishware, all of the ingredients except for alcohol, and he'll cleanthe kitchen, leaving it "the way it was -- or better," said Ma.
That was the case at a recent Sips and Suppers dinner at the home of Quinn Bradlee, son of Washington Post notables Sally Quinn and the late Ben Bradlee,who was left with a spotless kitchen once the meal was over.
"At the end of the meal, [Quinn Bradlee]was looking at the kitchen, and he was like, 'I've never seen it like this!'" said Ma.
Ma has already worked out a few themed menus for Gather + Feast. There's a duck-centric menu with plenty of foie gras, a surf and turf (but "not lobster and not filet mignon," he said), and an ode to New York vegetarian restaurant Dirt Candy.

Lynchburg, VA.- The record lows Central Virginia has experienced over the last couple of weeks has also set a record demand on plumber's daily calls. Adam Jewell, who has worked for his father's company "Randy the Plumber and Son," says he can't keep up with the call volume.
The weather has been so icy that he's foregoing his company's traditional "plumber's van," and running plumber's calls in a Subaru. "I've been working out of the Subaru all week, just trying to get to as many people as I can. I get better traction, especially as I get out to the rural areas."
He says he can't remember a deep freeze when so many plumbers were in such demand. "There's lines that are 50 years old that have never had an issue. That are breaking this year. Things that never freeze are freezing."
He scribbles away on a worn out paper pad from the bowels of a basement as he repairs this homeowner's frozen pipes. Trying to schedule one customer on top of another, but it's hard as his phone continuously rings and he's trying to keep up with calls from customers who he says have tried every plumber in the book and then the friends who are asking for help too. "I've had customers who have been without water for over a week."
Jewell says if your pipes haven't burst by now, you're probably okay, but he says many customers forget how very cold a basement can get in these temperatures. So, he encourages home owners to warm up their crawl spaces and basements. Heat tape is a good way to warm up pipes in frigid temps. Jewell says many customers end up calling him back after he repairs a broken line and it freezes or bursts again. If that does happen he has one very handy tip: Know how to cut your water off. That alone can prevent huge water bills after a leaky pipe goes off.
And before you get desperate, have a list of plumbers to choose from. Check out their credentials. Make sure your plumber is licensed, bonded and insured. Be wary of hiring anyone who is soliciting business without proper licensing or referrals. For more information check out our link below.

Lifelong Cam plumber dies from asbestos poisoning

A LIFELONG plumber from Cam died from exposure to asbestos over a number of years, an inquest was told.
Peter Hamilton, 80, of Hollywell Road, Cam, had a history of occupational exposure to asbestos, Gloucestershire Coroner's Court heard on Tuesday, February 24.
Senior Coroner for Gloucestershire Katy Skerrett said: "He complained to his GP of shortness of breath and weight loss in November of 2012 and medical examinations revealed a large tumour consistent with malignant mesothelioma.
"Although he was a lifelong non-smoker he had worked in the plumbing and heating industry for various companies for a number of years.
"In October 2013 it was clear that the disease was progressing and on January 16, 2014, when seen by a specialist, Mr Hamilton declined a course of chemotherapy.
"He died at his home on June 22 last year.
"The cause of death was clearly malignant mesothelioma and as he had a significant history of exposure to asbestos in his occupation my conclusion is one of death from industrial disease."

Detectives are seeking witnesses and information following a burglary in St Albans.
It is believed that the burglary, which occurred in Avenue Road, took place at around 7.30pm on Wednesday, February 18.
Offender(s) forced open the rear patio doors to the property before searching an upstairs bedroom.
Nothing was taken but substantial damage was caused to the door.
Detective Constable Chris Fisher, from the Local Crime Unit, said: Although nothing was taken, the homeowners have been left shaken by the burglary and understandably so.
I am appealing to anyone who was in the area at the time and noticed any suspicious activity to contact to me straight away.
"Any information, no matter how insignificant it might seem, could prove very helpful to our investigation.
Anyone with information contact the Hertfordshire Constabulary non-emergency number 101, citing crime reference F1/15/596.

Would-be thieves burst their way into a home through patio doors and raided an upstairs bedroom before making off empty-handed in an attempted burglary in the city.

Nothing was taken though an upstairs bedroom was searched.

STATE COLLEGE, Pa. -- Schlow Centre Regional Library is still trying to overcome flood damage due to a frozen pipe, but the process is a slow one, and their expected reopening date has been pushed back again.
A Closed sign remains on the front door of the library as crews continue to try to repair the upstairs and downstairs that were damaged by water from a frozen pipe.
The drying-out phase is complete, and crews are now painting and making minor repairs, but contractors found yet another frozen pipe a situation they have to take care of before opening day.
Library officials said they know this is an inconvenience, but theyre humbled with the support theyve received. More than $8,000 has been donated so far to help bridge the gap on items their insurance wont cover.
During this closure, library officials want to remind everyone that books that were on hold will still be waiting when their doors do open, and of course, no late fees will be charged.
Library officials said they are confident that theyll be opening next week.
