TIKOY
Chinese New Year is a holiday I really enjoy. Part of the thrill is a visit to Binondo, Manila. No matter how frequently I go, this oldest Chinatown in the world never ceases to excite me.
The Chinese deli Eng Bee Tin on Ongpin Street is always part of my itinerary. I look forward to its offerings, which are constantly changing, evolving. A visit will surely allow me to whip up innovative dishes making use of their products.
Last week, I made Asian Beef Noodle Soup using Eng Bee Tins ube and malunggay noodles. It was delectable. The noodles had a wonderful bite and were preservative-free.
Luckily, I have made good friends in the neighborhood, such as Eng Bee Tins owner, Mr. Ube Hopia himself, Gerry Chua, and his son, Gerik.
Its pure joy to have the father-and-son tandem around. Many of the stories they share are legendary, from firefighting (they are part of the famous Binondo fire volunteer group) to their latest creations: be it another hopia to add to Eng Bee Tins 21 flavors; the largest mooncake ever; or the 264-pound tikoy, which is now on display.
I checked out the 15 variants of tikoy, including the green and jasmine teas (so aromatic, best enjoyed cooked in the traditional manner).
The flavors that aroused my curiosity were the tikoy supreme (minced pork with salted duck egg), the sweet corn and the muscovado. These were the variants I wanted to experiment with, inspired by the dish that Gerik and I cooked during my Binondo tour.

HONG KONG: Conflicts, disasters, record high temperatures, an economic chill in Asia and more trouble for Justin Bieber the upcoming Year of the Horse is set to be a dramatic one, say Hong Kong feng shui masters.
With the Year of the Snake slithering into history, they say that the incoming Lunar New Year beginning on Friday is going to be the kind of horse that you shouldnt stand behind because it incorporates the volatile element of fire.
With this being the Year of the Wood Horse, and with wood being very combustible, there will be a lot of scandals, conflicts, explosions and arguments, celebrity feng-shui master Alion Yeo told AFP.
Feng shui literally meaning wind-water is influential in many parts of Asia, where people adjust their lives and even renovate offices and homes based on its edicts to maximise their luck and wealth.
Yeo says that conflict in the new year could be defined by anything from diplomatic tension to armed engagement, particularly in the first, fourth and seventh lunar months Feb, May and August.
The most likely thing that could lead to a physical war would be the Diaoyu Islands, Yeo said, referring to acute tensions between Japan and China over the Japanese-controlled islets that Tokyo calls the Senkaku islands.
The previous Year of the Wood Horse in 1954 was marked by nuclear bomb tests by the US and the former Soviet Union and the battle of Dien Bien Phu, which led to the defeat of French forces in Vietnam.
West gallops ahead
Chinese fortune-telling such as feng shui is based on ancient philosophy and the belief that events are dictated by the varying balances in the five elements that make up the universe: metal, wood, water, fire and earth.
The lunar calendar is based on the cycles of the moon and through Chinese folklore ascribes 12 animals, one for each year in the rotating cycle. The horse is in the seventh position.

FENCES will be erected at Ventnor Botanic Garden to stop people sneaking in without paying.
Businessman John Curtis, who heads the community interest company which owns the Isle of Wight attraction, has been shocked at the number of people avoiding paying the 6.75 admission fee.
With annual estimated visitor totals at just 55,000 well below the current number needed to break even he has reluctantly decided to strengthen fences.
He was finally persuaded following an altercation between a trespasser and a legitimate visitor in which the visitor was upset by being cajoled for being honest.
"People would not expect to be able to gain admission to other Island attractions without paying," he said.
A 50-year masterplan for the gardens development was expected to include initial submissions for grant aid, philanthropic support and corporate sponsorship totalling up to 3 million.
Mr Curtis said he had pumped in capital investment of more than 300,000 in 18 months more than the Isle of Wight Council did in the preceding ten years.

Despite the simmering differences between the Congress and its ally in Jammu and Kashmir, the National Conference, the Congress today appeared confident that the problems would be resolved soon. The two parties who are allies since 2008, are divided over the proposed restructuring of administrative units in the state.
While Chief minister Omar Abdullah had dug in his heels over the National Conferences intent to set up 700 new administrative units in the state, the Congress he alleged was stalling it. Omar Abdullah was reportedly contemplating stepping down if this move was thwarted.
Congress spokesman Randeep Singh Surjewala today stated, That's the beauty of democracy. Allies are entitled to their opinion. We'll sort this out when we sit together.
Till late last night Congress senior leaders met in the capital to make headway on the issue.
Tara Chand Sharma, a senior Congress leader and deputy chief minister of the state, who attended the meeting told PTI that the Congress was now contemplating 2000 or so administrative units. The Mushtaq Ganaie Committee had recommended 700 new administrative units but the figure may go up to 2000 or more, he said. The committee had proposed reorganising the structure to bring administration to people's doorsteps.
NC chief Farooque Abdullah also a Union Minister, told journalists that Omar is said to be thinking of resigning over the issue and would take the final call on the alliance. "This is not going to benefit one party but credit will go to both the parties," Abdullah said.
There are some people with vested interests who are trying to create mistrust between the coalition partners, added Abdullah. In the 87-member assembly while the NC has 28 members, the Congress has 17 MLAs.
